Oat Muffins

 

 

 

 

Ingredients

Oats : 40 gms
Maida : 2 cups
Salt to taste
Black pepper powder : 1 teaspoon
Green peas : 1/2 Cup•   
Green zucchini,grated : 1 medium   
Dill leaves (suva) (finely chopped) : 1tablespoon
Spinach leaves (chopped ) :1 cup
Ricotta cheese,grated : 1/2 Cup
Egg : 2
Baking powder : 1 teaspoon
Milk :1/4 cup

 

Method
* Preheat oven at 180°C.
* Combine Oats, salt, pepper powder, dill leaves, spinach, green peas, zucchini and ricotta cheese in a bowl. Mix well.
* Break eggs in another bowl. Add baking powder and milk and beat well with an electric beater. Add refined flour and mix well.
* Add egg-flour mixture to oats mixture and lightly fold till well mixed.
* Fill 8 individual silicon muffin moulds with the prepared mixture and place them on a  baking tray. Put the tray in preheated oven and bake for 20-25 minutes.
* Remove from oven, demould and serve.
