Okra Stir Fry





Okra/ Ladies Finger     - 15-20

Onion                            - 1 large sliced

Garlic                            - 3-4 cloves crushed

Cumin seeds                 - ¼ tsp

Urad dal                         - 1 tsp

Channa Dal                    - 1 tsp

Green chilly                     - 1 chopped

Dry Red Chilly                 - 2 broken

Curry leaves                    - 1 sprig

Lemon juice                      - 1 tsp

Chilli powder                     - 1 tsp

Turmeric powder               - ¼ tsp

Coriander powder              - ¼ tsp

Coconut grated                  - 4 tsp

Peanut                                - 2 tbsp, roasted

Oil                                        - 4 tsp 

Salt to taste


* Wash the ladies finger without cutting the edges. Pat them dry in clean kitchen towel.
* Now cut the edges and cut them into thin rings. Keep aside.

* Heat oil in a pan. Add the cumin seeds, Urad dal, channa dal and saute till the dal turns golden. Add the garlic, curry leaves, onion and the chillies. Saute till onions turns soft.

* Now add the ladies finger, salt, mix well, cover the pan and fry till the stickiness of ladies finger goes away. Then add the chilly powder, turmeric powder and coriander powder, mix well and fry further till the ladies finger is nicely cooked and soft

* Once it is done, add the grated coconut and the roasted peanut. Fry for around 3-5 mins stirring continuously and take off the heat. Add the lemon juice at the end.

* Garnish with coriander leaves and serve.
