Chocolate Pudding

 


under 250 calories and 10 gms of fat per serving


We need:

1/2 cup brown sugar

3/4 cup thickly chopped semi-sweet dark chocolate morsels

2 and 1/2 cups fat free milk

2 tsps melted virgin coconut oil

1 tsp vanilla extract

2 large egg yolks

1 tsp salt

3 tbsps unbleached corn flour


Method:

In a wide bowl, put sugar, salt, corn flour and mix well. Now add 1/2 cup fat free milk, egg yolks and beat gently until they mix well. In a different sauce pan, boil 2 cups milk. After boiling, add half of hot milk to the egg mixture gently and slowly, simultaneously keep mixing. Now boil this milk-egg mixture on low heat, keep stirring gently until the mixture thickens. Remove from heat and add chopped chocolate, coconut oil and vanilla extract while the milk mixture is still hot and stir gently until chocolate melts. Slowly transfer this pudding into a storage bowl and let it cool. You can serve it chilled. If you dont have much guilt, you can consider using butter instead of coconut oil. Sprinkle more chopped chocolate for serving.
