Sooji Halwa

 

 

Sooji halwa is one such sweet, takes no time but tastes so very good. And the best part is, this can be prepared by anyone, even though you are new to kitchen.

 

Ingredients:

* 2 cups - sooji/ rawa

* 1/2 cup - ghee

* 1 cup - sugar

* 3 cups - water

* 1/4 cup - condensed milk

* 1cup - of cashews (chopped )

* 1/2 cup - whole raisins

* 1/4 spoon - cardamom powder

 

Method:

Heat a deep pan on a medium heat and when hot add ghee. Then add the Sooji and mix well. Roast the Sooji (stirring frequently) till it turns in to a very light golden color and give off a faint aroma. Now add the cashews and raisins to the Sooji , and roast them also along.

while, roasting the Sooji, bring a mixture of the water, condensed milk, sugar and cardamom powder in a separate pot and heat on medium flame and stir often and bring this mixture in to a nice consistency.

When the Sooji is roasted, gently add the above mixture to it by stirring all the while to prevent lumps from forming. This comes out as asmooth paste-like consistency. Now, cook the mixture for 5 more minutes, till becomes thick and begins to come away from the sides of the pan.

Turn off the heat and allow the mixture to cool to a warm temperature.You can serve this halwa as it is, or, you can take a tray, apply ghee on the plate and pour this mixture in to plate and spread over. Take a knife and cut in to small blocks and refrigerate for half hour. Then serve as small cakes.
