Cheesy Colourful Stuffed Capsicum




Red Capsicum           - 1 

Green Capsicum        - 1

Yellow Capsicum       - 1 

Potatoes                     - 6 

Carrot                         - 1 

Peas                           - 1 cup

Turmeric                     - 1/2 tsp

Red chilli powder        - 1 tsp

Coriander powder       - 1/2 tsp

Garam masala            - 1/4 tsp

Dry mango powder     - 1 tsp

Asafoetida                   - 1 pinch

Cumin seeds               - 1/2 tsp

Oil                                - 1 tbsp

Salt as per taste


First wash and cut the capsicums into halves. If small sized, then cut the top and deseed them. Blanch these capsicums after cutting with little salt. Boil potatoes and chop into small cubes after peeling. Blanch the green peas. Wash, peel and grate carrot. Now in a pan heat a teaspoon of oil and add cumin seeds and asafoetida to it. Add peas and stir fry. Then add grated carrot to it and saute.


Add salt, turmeric powder, red chilli powder, coriander powder and garam masala. Saute it for a while and add diced potatoes to it and mix well. Cook on low flame for 4-5 mins. Add bit of dry mango powder as per your taste and mix well. Once it is cooked take it off the flame. Now brush the capsicums with some oil and stuff them with the masala. Place them in a greased microwave safe dish. You can add grated cheese on top of these capsicums. Now microwave these stuffed capsicum till the cheese melts. The colorful cheesy stuffed capsicum is ready to be served.
