Tofu wraps

 



Natural Proteins, home-made nut butters, ancient spices, a combination of different flavors can introduce a tangy and unforgettable taste to your tastebuds. try these Thailand-influenced Tofu wraps and you will want them often.

Ingredients:

* 6 whole-wheat rotis
* 2 cups whole moong dal sprouts
* 400 gms extra-firm tofu
* 1/4 cup peanut butter from home roasted peanuts ( groundnuts)
* 1 and 1/2 tbsp freshly squeezed lime juice
* 1 tbsp low-sodium soy sauce
* 1/2 tbsp olive oil
* 1/4 tsp garlic powder
* Chinese ( Sriracha) hot sauce for flavor and spice
* 1/4 cup chopped spring onions
* Small red capsicum strips
* Fresh chopped coriander for garnishing

Recipe:

In a bowl, combine required amount of Chinese chilli sauce, garlic powder, soy sauce, lime juice and peanut butter, and mix well.

Now, with the tofu...gently press the tofu bar between two paper towels to squeeze out the excess water. Now, cut the tofu bar into long, not-so-thin, strips. In a wide pan, heat olive oil and roast the tofu strips until golden brown. Or you can use the raw tofu as-is. Add the tofu strips, capsicum strips, chopped coriander, spring onions to the peanut butter mixture. Spread a wheat roti and spoon the veggie-tofu mixture at the center and now sprinkle the sprouts and roll the rotis carefully. As the chinese sauce, soy sauce and rotis have salt added, we dont need extra salt. You can use your previous night's left over rotis for this recipe. And even replace a few veggies with strips of carrots, cucumber, onions and such. Or try the same filling in Whole-wheat Flat bread or a Lettuce leaf for an innovation edge.
