Kashmiri Fried Rice

 

 

Ingredients:

Basmati Rice                                 - 2 cups
Garam masala                               - 1 tbsp
Mixed fruits finely chopped
Cream                                              - 2 tbsp
Milk                                                   - 4 cups
Sugar                                                - 1 tbsp
Cumin seeds                                   - 1/2 tsp
Green Peas                                     - 1/4 cup
Ghee/ Butter                                    - 2 tblsp
Salt as per taste

Method:

First wash and soak the rice for at least 10 minutes and boil it in milk without adding water. Heat Ghee or butter in a pan. Add cumin seeds once they splutter add sugar to this and fry for a minute. Then add onions and saute for 2 minutes. Add the peas, then add cream and rice and saute it. Garnish with chopped mixed fruits and serve hot with cucumber raita.
