Moist Carrot Cake

 



As part of  the series we are doing where carrot is the main ingredient , we found this wonderful and tasty  moist carrot cake recipe which you can bake and serve as tea time snack. Check out the ingredients and method to bake this sweet cake for your family.

Ingredients

All purpose flour (maida)- 250 grams (2 cups)
Baking soda - 1 tsp
Baking powder - 1 1/2 tsp
Salt -1/4 tsp
Grounded cinnamon - 1 1/2 tsp
Egg - 4
Granulated sugar - 300 grams(1 1/2 cup)
Vegetable oil - 1 cup
Vanilla extract/essence - 2 tsp
Walnuts chopped - 50 grams
Finely grated fresh carrot - 1/2 cup

Method

1. Preheat the oven for 15 minutes at 180 degree C

2. Grease the baking tray and dust flour.

3. Mix all the dry ingredients - Maida, baking soda, baking powder, salt and cinnamon together, sieve twice and keep it aside.

4. Beat eggs well until it turns frothy.

5. Add sugar little by little and beat till sugar dissolves.

6. Add vanilla extract/essence.

7. Then slowly add 1 cup of oil and beat it well.

8. Fold in flour gently until well incorporated. You have to get the ribbon consistency.

9. Then mix in grated carrot and chopped walnuts.

10. Bake for 25-30 minutes at 180 degree C or until a toothpick inserted into the center of the cake comes out clean.

Voila !You have a moist carrot ready to serve for Tea Time…
