Bitter Gourd Jam

 

 

Ingredients:

1 - Bitter Gourd
1/2 cup - sugar
3/4 cup - water
2 - Cardamom
Few black pepper
Few strands of Saffron

 

Method:

First soak the strands of saffron in warm water and keep it aside. Peel and wash Bitter Gourd. Cut it into 2 inch size and boil in water for approx. 2 minutes. Drain & squeeze all water from Bitter Gourd. Now pressure cook with little water by giving one whistle. Allow it to cool, then drain water and squeeze the extra water. Boil sugar and water together. Add black pepper, Cardamom, saffron strands, the bitter gourd. Cook till bitter gourd become tender. Allow it to cool and store in a jar.
