1. Peel ridge gourds and chop into small pieces.

2. Chop onions.

3. Grind ginger and garlic to paste.

4. Heat oil in a pan and add onions and fry till brown and then add ridge gourd pieces, salt , turmeric, red chillie powder, ginger-garlic paste and some water and cook them.

5. Grind coriander seeds, cinnamom sticks, cardamoms and cloves to powder.

6. Add this powder and corinder leaves to the cooked ridge gourd pieces, stir well and remove from heat.

Serve with roti or rice.
