Beerakaya when prepared as a stuffed vegetable with a zesty filling made from spices like sesame seeds, coriander seeds, cumin seeds and red chillis that are roasted and ground to a fine paste along with ginger, garlic, onions and tamarind, has a mingling of flavors :- sweet-spicy-tangy. A delicious stuffed curry that goes well with both rice and rotis.

Recipe of Ridge Gourd Masala
  • 1/2 Kg Ridge gourds
  • 2 onions
  • 4 garlic flakes
  • Small piece ginger
  • 1 tsp coriander seeds
  • 2 cloves
  • 2 cardamoms
  • 2 cinnamon sticks
  • 4 tsp oil
  • Salt, turmeric, redchillie powder
  • Few corinder leaves
Directions | How to make  Ridge Gourd Masala

1. Peel ridge gourds and chop into small pieces.

2. Chop onions.

3. Grind ginger and garlic to paste.

4. Heat oil in a pan and add onions and fry till brown and then add ridge gourd pieces, salt , turmeric, red chillie powder, ginger-garlic paste and some water and cook them.

5. Grind coriander seeds, cinnamom sticks, cardamoms and cloves to powder.

6. Add this powder and corinder leaves to the cooked ridge gourd pieces, stir well and remove from heat.

Serve with roti or rice.
