Ingredients:

3 Eggs

3 Large Carrots (chop them into medium sized pieces)

3/4th Cup oil

2 Cups maida

2 Cup sugar

1 Tsp baking powder

1/2 Tsp baking soda

1/2 Tsp cinnamon powder

Walnuts (optional)

Butter or oil to grease the pan

Method:

*  Preheat oven to 180°C

*  Sieve the dry ingredients- maida, baking powder, baking soda, cinnamon powder

*  In a blender, blend together the eggs, carrots and oil  for 4 to 5 minutes

*  Now, take a bowl and mix all the dry ingredients in it

*  Now combine the carrot blend with the dry ingredients in the bowl

*  Grease the pan with butter or oil and dust it with a little maida. Now pour the batter into the baking pan

*  Top the batter with walnuts, this is optional

*  Now Bake the cake at 180°c for 40 mins

*  Check at 35 mins with a toothpick, if it comes out clean the cake is done, else bake it for 5 more minutes

*  Now invert the cake after it cools down for a while and then serve it by slicing it.
