Description: |
Spinach, by itself, is a multi-nutrient vegetable and is packed with the goodness of iron, folic acid, vitamin a and vitamin c. Since ages, sumptuous spinach soup has been regarded best for weight watchers; but only if made without the use of butter and cream.

Recipe of Cream Of Spinach |
- 3 cups spinach (palak) , chopped
- 1/2 cup chopped onions
- 1/2 tsp finely chopped garlic (lehsun)
- 1 tbsp refined flour (maida)
- 2 tbsp butter
- salt to taste
- freshly ground black pepper powder to taste
- For The Garnish
- 1/4 cup cream

Directions | How to make  Cream Of Spinach |
- Blanch the spinach in boiling water for 10 seconds, remove and immerse in cold water to retain the color.
- Drain and pureé the spinach in a blender. Heat the butter in a pan, sauté the onions and garlic till the onion is translucent.
- Add the flour and sauté till the flour gets a sandy texture. Whisk in 2½ cups of water to the mixture stirring continuously and bring it to a boil till it thickens.
- Add in the spinach purée and mix well. Season with salt and pepper and bring to a boil.
- Serve hot, garnished with a tablespoon of cream in each bowl.
