Christmas season and everybody thinks of decorations, heavy lunches, dinners and treats only...but what about breakfast, the first meal of the big day ?! If not for the rest of the day, let us atleast start it in a healthy way...the nonDairy, Sugarless pancakes we are going to learn about today are definitely a healthy way to kickoff the celebrations.

 

Ingredients:

1/2 cup Sweet tasting Strawberries or Raspberries
1 ripe banana
3 eggs
1/4 cup coconut flour
2 tbsps olive oil or virgin, unrefined coconut oil
1 can heavy coconut milk
Honey or original Maple syrup

 

Method:

Blend 1/4 cup strawberries or raspberries into a puree. Now add 3/4th banana, 1 whole egg, 2 egg whites, coconut flour and 1 tbsp oil. Heat a griddle and make pancakes. (**When bubbles appear on a pancake, flip them over). In a mixing bowl, with a whisk or hand blender, mix 1 can heavy coconut milk and 2 tbsp strawberry/ raspberry puree into a whip cream texture. Spread liberal amount of this whip cream on these pancakes and layer them into 3 per plate. For the topping, pour honey or maple syrup with scoop of berry puree and some banana slices. Coconut flour, coconut milk and oil might make you think it smells like Kerala but believe me, virgin coconut oil dsnt have a strong flavor....enjoy your healthy pancakes, break'fastly' !!!
