Whole Wheat Carrot Orange Cake

 

 

 

Ingradients

Wholewheat flour    - 1 cup

Castor sugar            - 3/4 cup

Grated carrot            - 3/4 cup

Orange zest              - 1 to 1+1/2 tbsp

Corn starch                - 1/4 cup

Curd                           - 1 cup

Baking powder            - 1 tsp

Baking soda                - 1/2 tsp

Vanilla extract              - 1 tsp

Vegetable oil                - 1/4 cup

A pinch of salt

 

Method:

* First mix and melt caster sugar in a cup of curd with the help of hand blender. Now add backing powder, backing soda and a pinch of salt to the mixture and mix well. In another bowl take wholewheat flour and corn flour and sift 5/6 times.  Now preheat your oven on 180 degree temperature.

* Add 1/4 cup oil, grated carrot and orange zest into the curd mixture and mix well. To this add flour in the curd mixture gradually and mix it properly. at this stage add 1to 2 tsp orange juice if required to get the proper consistency. Take your cake mould, grease with butter and dust with flour. If you are using silicon mould, avoid this step. 

* Now your carrot cake is ready to go into the oven. Bake your cake for 30 to to 35 minutes. Depends on size of your mould and consistency of your batter. Check you cake with the help of tooth pick. If it comes out clean then your cake is ready. If not then bake for 5 minutes more. Take it out of oven. After 5/10 minutes, demold your cake and let it cool on a wire rack till it gets room temperature.You can also drizzle some homemade fresh orange sauce over it.
