Plum Cake

 


 

 

A simple, yet a conventionally Yummy New Year Cake!!

 

Ingredients:
Self-raising Flour – 240 grams
Eggs – 4
Sugar – 180 grams
Unsalted Butter – 110 grams
Raisins, Walnuts, Badam, Cashew and Tutty Fruity – 250 grams
Lemon /Orange peel – 20 grams
Cherries – 50 grams
Baking Powder – 1 tablespoon
Vanilla Essence – 5 ml
Instant coffee – 1 teaspoon
Cinnamon stick – 1 small stick
Rum – 90 ml

 

Preparation:

Chop the cherries, walnuts and lemon/orange peel into small pieces and soak them in rum along with raisins and other dry fruits for at least 24 hours and maximum being 2 weeks.

Take a big bowl, to cream butter and sugar along with vanilla essence.

Add eggs gradually to the batter and mix them well

Blend the instant coffee powder in 1 tablespoons of hot water, add to the above batter.

Take another bowl, mix flour and baking powder.

Mix the dry ingredients(flour and baking powder) to the above batter

Add the raisins and dry fruits soaked in rum, mix by slow folding. Then pour the batter in to a cake mould, filling about half of it.

 

Preheat the oven (OTG) at 170 C for 10 minutes. If you are using a microwave, in convention mode bake at 300 F.

Bake it for 20 – 30 minutes.

Once your cake is properly bake pull it out from the oven and cool it for 5-10 minutes

Turn it over a wire rack, cool it and store it. Slice before serving

 

 

To check the doneness of the cake:
Grab a toothpick, pull out your cake from the oven and insert the toothpick in the centre of the cake
If it comes out with some batter sticking to the toothpick, then insert it back into the oven and bake for few more minutes. Repeat the test once you feel it is done.
If it comes neat and clean your cake is done!
