Flour-free Banana Pancakes

 

 

Flour, the health specialists say in any form is not good. Cakes, Breads, Pancakes, all have flour. It is better to avoid grains in flour form and try to consume whole grains or atleast unbleached flour if unavoidable, instead of bleached and enriched flour. The grain-free, i mean, flour-free pancakes we are going to learn about today serve perfectly as Gluten-free, Soy-free, Dairy-free pleasure food.

 

Ingredients:

1 Banana ( ripe and mashed)

1 Tbsp Extra Virgin Coconut Oil

1 tsp organic Chia seeds

A pinch Cinnamon powder for flavor ( if you like)

2 organic Eggs

1 tbsp Stevia or Organic Honey

Strawberries and Banana pieces for topping

 

Making:

Add the eggs, cinnamon powder, honey or stevia and chia seeds in a mxing bowl. Let sit for 10-15 mins and the Chia seeds swell up to form a thick paste. Now add the mashed banana. Heat a skillet on medium and place coconut oil until ready for cooking. Now place the pancake batter and cook the same way as you make pancakes. Once you see bubbles breaking on it, flip it and cook. Make as many pancakes of the size you like. Top them with almond butter and eat with pure Maple syrup or Honey. Dress them up with ripe and juicy Strawberries and some more Banana pieces. Not only is this recipe fabulously nutritious, it is also a perfect balance of protein, healthy fats and carbs for someone who is on diet and for toddlers who should eat healthy. Try it with your own healthy combinations of toppings and you will love this Banana Pancake !
